Following the success of its first whiskey launched in November 2016 and a series of small batch releases, south-west Ireland-based Dingle Distillery is now unveiling its second limited-edition single pot still whiskey.
‘The release of our first single pot still whiskey proved we are committed to exercising our pioneering spirit to fuel the Irish whiskey revolution, paving the way for a new wave of pot stills that appear to be following suit,’ said Elliot Hughes, partner at Dingle Distillery.
The spirit was matured in 70% bourbon, 15% oloroso sherry and 15% Pedro Ximenez sherry casks. According to the Dingle, the blend results in a remarkable complexity. The nose shows plenty of warm winter spices, dark chocolate and dried fruits. The palate is oily and rich, with a mild sweetness and a citric, gingery zing balanced out by flavours of biscuit, salted caramel, honey and marmalade.
2.900 bottles of the second single pot still whiskey have been produced, of which only 600 are destined for worldwide distribution. ‘Our first single pot still sold out within a matter of days, creating much anticipation for the second,’ commented Hughes. ‘We anticipate this release will be just as popular, if not more so.’
The distillery’s next small batch is due to be released in March 2019.
