Saving the planet one Trash Tai at a time, Trash Tiki founders Iain Griffiths and Kelsey Ramage are to take control of the drinks direction for new hotel, members’ club and restaurant, The Curtain.
Griffiths (of Mr Lyan) and Ramage (formally of Dandelyan), certainly know their stuff when it comes to cocktails, overseeing the drinks for Red Rooster Shoreditch, Rooster Taqueria, rooftop guest and members’ bar The Lido, and the various members’ areas of the hotel.
Launched in 2016 as an anti-waste punk pop-up, Trash Tiki showed no signs of slowing down, with the duo just finishing a stint creating the drinks for Dan Barber’s wastED London.
Including the restaurant Red Rooster Shoreditch, ‘cheffed up’ by Marcus Samuelsson, the May opening will also see Jennifer Willing (previously of Dandelyan) take on the role of beverage director and Zoë Van Der Grinten (previously head bartender at wastED London) join Red Rooster as bar manager.
So let’s explore the menus: Rooster Taqueria will serve cocktails that ‘champion sustainability’, focusing on Latin and agave spirits including tequila, mezcal, pisco and cachaça. There will also be frozen slushy cocktails from two in-house slushy machines… oh yes.
Embracing the Trash Tiki spirits, Rooster Taqueria will serve drinks made using ingredients saved from the other operations in the hotel. The Nixta Sour will use second day tortilla orgeat made from leftover corn tortillas while the Tip Off Fizz will use rum flavoured with leftover mint and coriander stems.
To top it all off, the hotel room mini bars will also feature bottled cocktails from the Trash Tiki duo with a Sun Downer trolley mixing and serving cocktails for guests at 5pm each day…
