The Savoy’s Joe Schofield wins Beefeater MIXLDN competition

Joe Schofield (pictured top, second left), of the American Bar and Beaufort Bar at The Savoy, is the new UK champion of Beeafeater’s MIXLDN competition.

Created in 2011, the global competition asks bartenders to take inspiration from gin’s history, and this year the UK round saw bartenders find inspiration in the evolution of London.

Schofield’s entry, Mother’s Milk, paid homage to a particular building. 24 Milk Street, which was incinerated in the Great Fire of London, later became home to Victorian chef Isabella Beeton. In one of her books she made reference to a technique called burning milk, which Schofield used in his drink.

Schofield will now be representing the UK in the global final, taking place between 26 and 29 January in London.

Schofield said: ‘I feel so grateful to have won the 2015 UK Beefeater MIXLDN competition as it was a very challenging final with some amazing drinks from the other contenders. I am very excited about being part of the global final – I know competition will be stiff but it will be a great opportunity to learn from the industry’s best. I am also really looking forward to seeing some of my friends who are representing their respective countries and I am immensely proud to be representing the UK.’

Mother’s Milk
Joe Schofield, American Bar and Beaufort Bar at The Savoy
Glass: Small milk glass
Garnish: Grated burnt marshmallow soot and cracked match
Method: Dry shake and wet shake all ingredients except the burnt milk. Strain into glass, top with burnt milk to avoid over-dilution of flavour and texture. Grate the burnt marshmallow soot on top. Light and extinguish the match.
50ml Beefeater Gin
30ml burnt milk (milk, charred barley, vanilla, smoke)
25ml lemon juice
25ml egg white
12.5ml sugar syrup
