Compass Box has never shied away from bending the rules and its latest release is no exception.
The whisky company recently launched a new limited edition blended Scotch, Delilah’s XXV, in partnership with punk rock whisky bar Delilah’s. The 8,520-bottle release celebrates the 25th anniversary of the Chicago institution.
This time around, Compass Box’s approach takes the form of a cheeky bit of repurposing: Delilah’s XXV follows an earlier collaboration in 2013, when the two businesses teamed up to create a whisky for the bar’s 20th anniversary. A small amount of the 20th anniversary blend was held back and aged further to provide the foundation for Delilah’s XXV.
This base liquid was combined with malt whisky aged in Spanish sherry casks of American oak to create XXV. The resulting blend is a rich Scotch whisky with a vanilla sweetness that lingers and a light peck of sherry.
‘We wanted to create a variation and a new style that retains the DNA of the original,’ says Compass Box’s founder and whiskymaker John Glaser, who worked with Delilah’s owner Mike Miller to craft the expression.
And the best way to serve it?
‘Given the way most whisky is enjoyed in Delilah’s in Chicago, we’d recommend a boilermaker,’ Glaser explains. ‘Pair with a light, hoppy IPA – the sweetness from the sherried components will help cut through the dryness of the hops.’
