Bramble mixologist creates salt and pepper bitters

With all the excitement around bitters at the moment we were intrigued to hear that Ryan Chetiyawardana of Bramble in Edinburgh has been making his own salt and pepper bitters.

Based around a recipe of more traditional bitter ingredients (black and green cardamom, cloves, black tea, bitter orange, vanilla) the main flavour profile comes from white, pink, black and green peppercorns and fleur de sel.

‘They work amazingly with dark spirits in particular,’ said Chetiyawardana, ‘lifting wood notes, emphasising sweetness, and accentuating spice.’
He recommends trying them in a Tequila Flip made with Don Julio Añejo, a whole egg, salt and pepper bitters, orange marmalade and sugar.
