OCCITAN FIELD

Elliot Pieddeloup
Freud

Occitan Field is inspired by bartender Elliot Pieddeloup’s native South of France. ‘I always remember the smell of the lavender fields at home and this drink transports me back there,’ he says. The floral drink is perfectly balanced by the addition of homemade honey and lemon juice. ‘It’s a good mix with the lavender and it enhances the structure,’ Pieddeloup adds.

The base spirit, Bordiga, was chosen for its simplicity in what would otherwise be an overpowering cocktail. ‘We have a lot of gins now,’ the bar manager says. ‘The structure is nice and there isn’t too much going on. It’s simple and it all works well and is really nice.’ In terms of taste, the Montpellier native says: ‘It’s really floral. There is a good balance and it is really nice to use the Bordiga lavender spray. The smell of lavender,’he smiles, ‘it just transports me home.’
