The latest luxury bar to open in Liverpool is Pima, a sleek monochrome affair in the lobby of the Hilton Liverpool hotel.
The low-lit 90-cover venue is kitted out in a mix of circular black leather booths, brushed metal and striking glass panels shot through with air bubbles. Things get even more opulent in the private area for 20, which is lined with bevelled mirrors, fringing and undulating lighting.
The drinks list includes champagne cocktails and fruity numbers aplenty such as the Parma Violet with blueberries, lemon vodka and violet liqueur (from £6.90) along with tasting flights of Martinis and Manhattans (£15) for fans of the classics. Sazeracs and Juleps play on the deep South theme.
Bar manager is Liverpudlian James Myers. And the name? It’s a reference to the cotton industry which was a major part of Liverpool’s economy in the 18th century – ‘pima’ is short for gossypium barbadense, a luxurious type of cotton.
