A paler shade of red

Negroni nuts should make sure they drop by the Portobello Star next time they’re in West London to try Jake Burger’s White Negroni made using Sipsmith Gin, Lillet Blanc in place of sweet vermouth and Salers Gentiane in place of Campari.
Salers Gentiane is a bitter aperitif that Burger unearthed during a visit to France. It’s old school to the point of being unfashionable on its home turf, and has no UK distributor at present – but (if you speak French) you can read more at the Salers website, otherwise Burger can help put you on the right track.
The drink is then garnished with an orange wedge and a grapefruit twist. ‘It makes one feel sophisticated and intelligent like the French whilst retaining one’s integrity and stiff upper lippedness like the English,’ says Burger.
