Pernod Absinthe Rebel Dining Society

Pernod Absinthe has teamed up with The Rebel Dining Society, and the match is a decidedly compatible one.

The result is a series of dinners entitled the Pernod Absinthe Green Hour. Held at changing secret locations in East London, the nights include five courses of experimental cuisine, live music, and interactive art. They also include no small amount of absinthe. Tickets are sold via the Rebel Dining website for £15 each, with cocktails going for £5 on the night.

Punters have a choice of three cocktails. A Paris Citronné combines Pernod Absinthe with apple juice, lime and orgeat, while a French Kiss mixes the absinthe with passion fruit and lime. The trio is completed by a Mojito, but with absinthe completely replacing the rum.

The night begins, however, with the absinthe ritual. A measure of Pernod Absinthe awaits each guest, complete with sugar, spoon and dripping ice-water. Food follows. On the most recent evening, held at the Empire Studios in Bethnal Green, dishes included a clear tomato consommé with thyme jelly, a roast wood pigeon main course, and a raspberry and black pepper panna cotta dessert. The final element is music, provided by The Hackney Colliery Band most recently.
