The sweetest thing
Wines of Roussillon (the region's generic body) has started the hunt for its Wines of Roussillon Dessert Trophy 2012 winners.
The plan is to find the country's best sommelier/dessert chef duo, by encouraging the pairs to create the best dessert and wine match. Competitors have also been briefed to base their entries on dried fruit and/or honey notes, and the wine used must be Roussillon Vin Doux Naturel. Entries close on 31 August, and the UK winners will be treated to a selection of Roussillon wines and a two/three day trip to the region, as well as being entered in to the competition's European final.
Eric Aracil, the brand's export manager commented: 'The CIVR is thrilled to once again launch its quest to find the UKs finest pastry chef and sommelier team. Both roles require a high level of talent and dedication, and an understanding of the crucial dynamic which lies between front of house and the kitchen. It is a pleasure to recognise and reward those who are ambitious and imaginative within their industry, and given the wealth of world-class talent currently coming out of UK restaurants, we can expect to see some really interesting recipes and flavour combinations.'
