Down in Mexico
If you thought that London’s Café Pacifico was suffused with agave spirit on a regular day, you should have seen it on a particular afternoon recently, during its Tequila and Mezcal Season.
Agave education was the order of the day, as a who’s who of Mexican spirits descended on the bar. Pacifico founder and tequila ambassador for Europe, Tomas Estes, invited founder of the Tequila Interchange Project and owner of Siembra Azul Tequila, David Suro, to speak to a group that included top bartenders from not only the UK, but Greece, South Africa and the US too.
After a tasting of an array of interesting products, including an example of agave spirit raicilla, there was a blind tasting of 11 products, including Sauza Blanco from 1975.
