The Cava Academy is a training course for UK sommeliers of all levels approved by the Consejo Regulador DO Cava. It take place in London's 67 Pall Mall on three consecutive Mondays staring from 4 November.

Upon successful completion of the course, sommeliers will be awarded the Official Cava Sommelier title in person from D. Javier Pages, president of the Consejo Regulador DO Cava, during the awards presentation on Monday 2 December.

Sommeliers are invited to apply here by submitting a copy of their CV, along with a supporting statement (max 300 words) about why they wish to attend the course and how this would benefit them in their current role.

Selected candidates will be offered to attend and complete the course at no charge but will be expected to attend all three days in order to pass the course.

The Cava Academy programme

Day one: Monday 4 November

Course tutors: Rebecca Gibb MW & Patrick Schmitt MW

Course times: 10am–2.30pm

Theory: History, geology and viticulture

Tasting: Base wines, indigenous varieties, young wines

Day two: Monday 11 November

Course tutors: Lenka Sedlackova MW & Sarah Jane Evans MW

Course times: 10.30am–2.30pm

Theory: Viniculture, ageing and Paraje Calificado

Tasting: Reserva, Gran Reserva & Cava de Paraje Calificado

Day three: Monday 18 November

Course tutor: Fiona Beckett & marketing and communications director of DO Cava

Course times: 10.30am–3.00pm

Theory: Gastronomy, the perfect serve and commerce

Tasting: Food pairing with Cava and examination
