England’s largest winemaker has released the third product in its premium spirits range. Chapel Down Pinot Noir Gin has been produced by distilling Pinot Noir grape skins leftover from the pressing process for the estate’s sparkling wine and blending them with English wheat spirit.
Garnish: Slice of lime, raspberries, rose petals
Method: Crush handful of raspberries in a shaker and add ice. Add gin, raspberry liquor and lime juice. Shake well and strain into glass. Top up with pink lemonade and garnish.

The result, according to Chapel Down’s head winemaker Josh Donaghay-Spire, is ‘an aromatic pink gin with delicate aromas of red berries, which perfectly balance the juniper-led palate and refreshing citrus finish'. 'This is our best yet,' said Donaghay-Spire.
The use of Pinot Noir is believed to be a world-first. ‘Not only have we made use of the skins,’ he commented, ‘we’ve gone even further and [...] matched the botanicals with the characteristics of the Pinot Noir grape.’
Infused with the likes of coriander, dried red berries, angelica and grains of paradise, Chapel Down Pinot Noir Gin has botanicals that reflect the characteristics of the grape variety.
The winemaker has been busy with other pursuits, too. Earlier this year, it opened Chapel Down Gin Works in King's Cross, while next month will see its new beer brand Curious Brew get its own brewery. It’s also soon to plant in its newly leased land in Kent, where it will have almost 1,000 acres under vine.
Currently stocked in Selfridges, Chapel Down Pinot Noir Gin will soon be available to the on-trade.
