Dom Pérignon launches P2-2000

The latest instalment of Dom Pérignon's Plénitude series of vintage champagnes launched today in London. P2-2000 is the second expression of the house's 2000 vintage; the first, P1-2000, was released in 2008.

Imbibe was invited to an exclusive tasting of the new cuvée with winemaker Vincent Chaperon, who works alongside Dom Pérignon's chef de cave Richard Geoffroy. The comparative tasting offered an opportunity to try P2-2000 alongside P1-2000 and Dom Pérignon Rosé P1-2000.

'Spring and summer of the 2000 vintage were quite cloudy. Then from the last week of August until harvest we had sun, which had a positive impact on the final wines,' said Chaperon. 'It was a year when Pinot Noir and Chardonnay performed at the same level. As result the ratio in the blend is really balanced at around 50/50,' he added.

A concept devised by Geoffroy, the different plénitudes reflect the maturation cycles of Dom Pérignon. The first will be released after around nine years, the second after 16 years and the third no less than 25. 'The extra time for the second plénitude builds up the architecture of the wine. You get more of the vintage expression and more of the Dom Pérignon personality,' explained Chaperon.

The P2-2000 was disgorged in May 2016, with dosage of 4g/l (compared with 7g/l for P1). 'For me this wine is about coherence,' said Chaperon. 'It has an energy that's been accumulating through the maturation.'

Vibrant aromas include spice and candied peel, with toasty notes and a touch of smokiness developing as the wine opens up. The fresh palate offers a brisk attack, with a mineral, saline note and grapefruit zest, persisting through to a long finish.

Dom Pérignon P2-2000 will be available from July.
