Fuller's unveils pilot kit to drive beer innovation

Fuller’s has unveiled a new pilot kit at its Griffin Brewery in Chiswick, London, with the promise that it will be used to experiment and develop new commercial recipes.

The 15hl brewhouse, which cost £680,000 and is on public view at the back of the brewery shop, has already produced a variety of beers, including a New England IPA, a Thai stout, a grapefruit pale ale, a galaxy pale ale and Brew One, a traditional strong ale. Next up will be a white IPA.

Junior brewer Hayley Marlor is in charge of the kit, which was built by Gravity Systems. It has been designed to mimic the main kit at Fuller’s, so that successful recipes can be easily scaled up for commercial release.

'It gives us the opportunity to test some yeasts and raw materials,' said head brewer Georgina Young (pictured above). 'How does grapefruit pulp work as compared to grapefruit juice, for example? That’s what we can experiment with now.'

Of the initial recipes, the most likely to be scaled up is the New England IPA, according to Marlor.

'That’s the one I’m most proud of,' she said. 'It’s delicious, but also clean-tasting.'

She has been working on the kit since July, when former Beavertown head brewer Jenn Merrick helped to commission it. Another of Fuller’s junior brewers will take over from her next summer for a one-year stint.

Fuller’s has also revealed details of its next Fuller’s & Friends collaborative project. The theme is ;Great Britain vs the World, and Magic Rock (England), Pilot (Scotland) and Tiny Rebel (Wales) will represent Britain against breweries from Australia, South Africa and Norway. These will be available in April next year.
