The Ivy and the Herefordshire-based Chase Distillery have joined forces to create a new gin to mark the restaurant’s 100th Anniversary.

The liquid was created in collaboration with the Ivy’s bar team, using English ivy and other wild, herbal and aromatic botanicals. The Ivy leaf was steeped alongside juniper, spruce needles, sage leaf, coriander, and bitter almond, with the resulting flavour said to be distinctly piney, with light, fresh herbal and citrus notes to finish.

Darren Ball, bar manager at The Ivy said: 'Gin has always played an important role in the history of The Ivy, with bartenders serving up classic gin cocktails from the 1920’s onwards.

'It remains one of our most popular spirits and it seemed only right that we should recognise this celebratory year with a commemorative spirit. The Ivy Centenary Gin works beautifully in classic serves such as a G&T or Dry Martini, where the herbal and pine notes shine through.'

The Ivy will serve several new cocktails to mark the launch of the gin, including the Carminetta Fizz, named after a play that opened in The West End in 1917, the year The Ivy opened. It uses includes a blackberry and pine shrub, lime juice and ginger ale.

William Chase of Chase Distillery adds: 'We are proud to be producing this very special Centenary Gin for such an iconic fixture on the British restaurant scene. We’re now in our tenth year at Chase Distillery, I hope we celebrate our own centenary in such style as The Ivy.'

As well as being sold at the The Ivy, West Street and at all The Ivy Collection restaurants, Ivy Centenary Gin is available to purchase from John Lewis from late-October priced at £50 for a limited-edition gift box.
