The latest expression from the Warwickshire distillery has been seasoned with Oloroso and Pedro Ximenez Sherries
Sherry Cask Single Malt Whisky is a non-chill filtered blend of the distillery's single malts, matured in American and Spanish oak hogsheads and butts, and seasoned with Oloroso and Pedro Ximenez Sherries.
Cotswolds Distillery uses 100% locally grown barley which is floor-malted by hand in Warminster. It's mashed and fermented over 90 hours before being twice-distilled in copper pot stills. For the new liquid, the whisky has been sherry aged throughout maturation, allowing the whisky to develop 'a full and deep flavour'.
'I love a sherry cask whisky as it is one of the truly iconic single malt whisky styles,' commented Nickolas Franchino, head of production at Cotswolds Distillery. 'Good sherry casks give rich, fruity, spicy and nutty flavours that marry perfectly with the underlying malt character and are a joy to savour.'
On the nose, Sherry Cask Single Malt is said to have notes of 'brown sugar and cherry pie with a touch of roasted coffee beans', while on the palate it is 'viscous and rich' with 'dark stone fruits and a hint of roasted almonds'. The finish shows 'peppery oak spice accompanied by notes of dried fruit'.
