Nine Lives launches sustainability-focused cocktail menu

London Bridge bar Nine Lives has launched a cocktail menu, continuing the venue's exploration into sustainability.

With an ethos based on reduced waste and ingredients selected with intention, the new menu includes a section on signature drinks, one on sharers and a final of remixed classics that showcases cocktails from each spirit category and serves them three ways: classically, twisted by the bar, and twisted by global bartenders known and loved by Nine Lives.

Many of the fresh herbs used throughout the new menu come from its own garden, which is grown and tended in collaboration with St Mungo's, the charity that helps people transition from homelessness back into society.

It's not just the menu that's had a rework however, with a new public artwork called ODE being installed directly outside Nine Lives on Holyrood Street from LGBTQ+ artists Trinity Tristan and Tim Whiting, acting as an ode to liberty.

Kelross Daiquiri

Made with Ron Zacapa rum, bramley apple juice and Hackney honey, this is Nine Lives' low-carbon-footprint twist on a Daiquiri.  By taking out the need for imported limes, the team has introduced a sour cooking apple, grown by one of the bar's owners, with plenty of malic acid to replace that sharp bite.

Kafé Kernal

Made with Kuka cold-brew coffee, tonic water and popcorn essence, the Kafé Kernal is one of the non-alcoholic options in the new menu. Designed to mimic the mouthfeel of a boozy drink, it has a light caffeine kick.


Made with Somerset cider brandy, cherry, hazelnut, lemon and parsley grown in the bar's garden, this drink is being described as rich, herbaceous and complex.
