Looking for something to appeal to health-conscious drinkers this season? Pure Wild Spirits has launched Freya, a spirit made using trendy birch tree sap.
Freya is distilled using sap from northern European forests, creating a unique spirit category. The spirit, bottled at 40% abv, is distilled using no added botanicals and claims to be low in calories.
The birch sap is sustainably sourced, harvested once a year in winter for a short period of time. This is then frozen and sent to a distiller in the UK – before being fermented and distilled using copper pot stills.
Working in the soft drinks industry before coming up with the spirit, Freya's founder Dave Wallwork was inspired by the icy forests and story behind birch water, deciding the story and concept behind harvesting the sap was more reminiscent of a spirit brand.
While the spirit is mostly neutral, we found it extremely smooth, with a fruity aroma and subtle notes of caramel, peach and vanilla – also slightly reminiscent of tequila. The recommended serve for Freya is with Fever-Tree Elderflower Tonic, garnished with plenty of fresh mint leaves, but we also tried the Fire of Freya, using fresh ginger, chilli, cumin and agave, and a Birch & Moss Martini with manzanilla sherry.
