Spooky spirits: Halloween serves

Halloween is almost here, and we suspect you'll all be gearing up for a costume-clad punter filled weekend. No doubt you've got your spooky serves underway, but just in case, here are some Halloween cocktails to give you some ghoulish inspiration. Get the food colouring ready...

TROPIC THUNDER

Euan Halliday, The Lucky Liquor Co, Edinburgh

Glass: Coupette
Garnish: Black lime
Method: Stir down above ingredients and strain into chilled coupette. Float foam on top and grind black lime on the top.

25ml El Dorado 3yo rum
20 ml 4% acid blend solution

15ml Dark Matter spiced rum
10 ml sugar syrup
0.5g activated charcoal powder
ginger foam*

*For the acid blend:
3g malic
27g citric
12g sugar
700ml water

**For the ginger foam: 
Bring 2g vegetarian gelatine and 400ml water to boil and remove from heat. Allow to cool and add 175ml ginger juice, 175ml homemade lime cordial and 100ml sugar syrup. Blend with 20g powdered egg white, and charge with nitrous oxide in a cream whipper.


ZOMBIE

Mojo, Manchester

Glass: Hurricane
Garnish: Flaming lime shell and Luxardo cherry
Method: Shake all ingredients, apart from Gosling 151. Strain into hurricane glass over fresh ice. Float the 151, garnish.

25ml Appleton Signature Blend
25ml Wray & Nephew
25ml orange juice
25ml pineapple juice
15ml lime juice
12.5ml velvet falernum
12.5ml Gifford Apricot Brandy
10ml Goslings Black Seal 151 


SPICED PUMPKIN FLIP

Dirty Martini

Glass: Coupette
Garnish: Light dusting espelette pepper
Method: Shake and strain into chilled coupette.

25ml Goslings Black Seal
10ml gingerbread syrup
10ml cinnamon syrup
10ml pimento dram
20ml apple juice
15ml orange juice
10ml egg white
10ml lemon juice
2 dashes Angostura Bitters


BLACK HEAVEN

Threadneedle Bar at the Royal Exchange, London

Glass: Coupette
Garnish: Orange zest cut into the shape of a bat
Method: Shake all of the ingredients together with plenty of ice, and strain into a coupette glass. 

50ml Flaming Pig spiced Irish whiskey
25ml pineapple juice
10ml pumpkin syrup
5ml lemon
5ml black food dye

 

 


THE BLACK ROSE

Glass: Nick and Nora
Garnish: Edible flower
Method: Shake all ingredients and double strain.

40ml calvados
25ml nettle tea syrup
10ml cassis
20ml lemon
2 drops of black food colouring
