Bartender: Derren King, Chypre Caresse. Green Bar at Hotel Café Royal
'This drink emerged from something we've been doing with Parfums Givenchy, and are launching just before London Fashion Week,' explains Derren King. 'There are 10 unisex fragrances, so we've made a cocktail to accompany each, as well as five additional non-alcoholic ones.' When creating this drink, King drew on his experience visiting Harrogate to see where Slingsby Gin sources its local botanicals. 'Taking those into account, we thought it'd be perfect with one of the perfumes.
'I got a bit lost in the fragrance – there were a lot of unusual botanicals that I was able to learn about and find ways to incorporate into drinks. The basic drink is something I’ve been playing around with for a while, and then the fragrance and the various elements all came together. I hadn't realised that I was making a twist on the Paloma!'
