Bushmills Black Bush
Connor Bloomfield, The Sun Tavern
We’re coming into spring and summer, which is when whiskey can take a bit of a hit, so I’ve created a tropical drink that’s refreshing, but still has a boozy element at the end of it,’ declares Connor Bloomfield of his short, stirred drink.
‘It’s a tiki Old Fashioned-style drink, so I wanted to try to bringout more of the tropical fruit that’s coming through on the whiskey. Bushmills Black Bush is a bit of a heavy hitter-style whiskey, so you want something that’s going to come through.
Banana and absinthe can be quite overpowering flavours, but by using the Black Bush it just shoots through in the end, and these become complementary to it instead. Absinthe is a staple in tiki drinks, too. It’s a fun, easy Old Fashioned, a bit easier for people to drink instead of just pure booze.’
Garnish: Maraschino cherries on a stick
Method: Stir and strain.
50ml Bushmills Black Bush
15ml Byrrh Grand Quinquina
5ml banana liqueur
2 dashes Angostura Bitters
1 dash absinthe
