Welcome to the second edition of Star Serves by Imbibe, where we shine alight on some of the fantastic bartending talent in the UK and the drinks being created. In this issue we asked a range of brands to work with a bartender to develop a bespoke seasonal serve.

We hope that the drinks featured here will give you inspiration for your own cocktail list and help you to add a seasonal twist to your drinks offer.Whether you recreate some of the drinks on these pages or devise a seasonal serve of your own, we’d love to know what recipes you’reworking on. OCCITAN FIELD

Occitan Field is inspired by bartender Elliot Pieddeloup’s native South of France. ‘I always remember the smell of the lavender fields at home and this drink transports me back there,’ he says. The floral drink is perfectly balanced by the addition of homemade honey and lemon juice. ‘It’s a good mix with the lavender and it enhances the structure,’ Pieddeloup adds.

The base spirit, Bordiga,was chosen for its simplicity in what would otherwise be an overpowering cocktail. ‘We have a lot of gins now,’ the bar manager says. ‘The structure is nice and there isn’t too much going on. It’s simple and it all works well and is really nice.’ In terms of taste, the Montpellier native says: ‘It’s really floral.There is a good balance and it is really nice to use the Bordiga lavender spray. The smell of lavender,’he smiles, ‘it just transports me home.’

Glass: Coupe
Garnish: Bordiga lavender tincture spray
Method: Shake, strain and finish with a spritz of lavender spray.

45ml Bordiga Gin Occitan
15 ml fresh lemon juice
15 ml homemade honey, lavender and vine leaf syrup
