Bartender: Fabio Zannini, The Duck and Rice

'As a base for a cocktail, Auchentoshan is a soft whisky, with chocolatey notes, and also some autumnal elements like spice and hazelnut, which it really brings to this cocktail,' says Fabio Zannini. 'I love beer cocktails, so I definitely wanted to make one with Auchentoshan.
'In early experiments I had originally gone with a sour beer, but I changed the beer to London Pride after settling on passion fruit for the juice, as it's very sour already. I wanted to make something fresh, but not a long drink – something that was served up in a Martini glass.' The result is an autumnal sipper, rather than a wintry concoction. As Zannini declares, 'ultimately, it’s a London cocktail, in a London pub, with London Pride!'

15ml lemon juice
15ml sugar syrup
2 dashes Angostura Bitters
