This June, the Hebridean distillery will release an Old Tom-style gin
Cait Sith (pronounced 'caught shee') is a small-batch gin, based on the distillery's award-winning Colonsay Gin and inspired by Celtic folklore and the natural surroundings of its home, the Isle of Colonsay.
Cait Sith is a cat that once roamed the Scottish Highland & Islands, said to bring a blessing or a curse on householders it visited, depending on what they left it to drink.
The gin is described as 'drier than a Dutch Genever, but sweeter than a London Dry', with notes of 'orange, pink grapefruit and vanilla'. It is suggested to be served with tonic, ice and a pink grapefruit slice garnish.
Wild Thyme Spirits has an exclusive foraging agreement with the Colonsay Estate (owners of the island) which gives it access to a large array of local botanicals to use in its products.
